While watching Mimi Ikonn’s instagram stories a couple of years ago, she made the most beautiful apricot pie. Just looking at her instagram stories made my mouth water even though I’d never had such a thing as an apricot pie before. At the local grocery store, I picked up ingredients to make my own.
I wasn’t sure what to do or how to make it since she doesn’t have a recipe anywhere. I just winged it from what she said, and in the end kind of just threw apricots into a pre-made organic pie crust. And you know what? It was the best recipe of the summer. It’s the perfect summer snack to indulge your sweet tooth — simple, light, and fresh.
Store-bought pie crust
Pre-bake the crust as directed by the packaging. Wash and thinly slice the apricots. Arrange apricot slices in a spiral around the pie crust. Bake pie at 350°F for 20-30 minutes, or until the smell of cooked apricots wafts through the house. The pie is good both hot out of the oven and cold after being stored in the refrigerator.
