This one’s inspired by the chipmunks in the backyard, who planted a cherry tomato plant that is now taking over our garden bed by the back door. Thanks guys.
Chipmunk Cherry Tomato Sauce
1 Tbsp olive oil
6 cloves garlic, chopped
1 ½ lbs cherry tomatoes, cut in half
Salt and pepper
2 Tbsp fresh basil
In a large pan, heat oil on high. Add garlic and cook until aromatic and golden. Add tomatoes, salt, and pepper. Reduce heat to low, and simmer covered for 15 minutes. Add finely chopped basil and cook another 15 minutes.
